Gram flour, chickpea flour, or besan, whatever you choose to call it, is a common ingredient in Indian kitchens. There will be at least one dish which gets prepared in Indian homes that contain besan. You can make a complete meal out of it. Some of the common dishes are besan chilla, besan halwa, gatte ki sabzi, and besan laddoos, to name a few.

If you are allergic to gluten, you can still consume besan dishes. Moreover, those on a weight loss spree, find it satiating, yet easy to digest.

·       Besan Chilla

It is a protein-packed, high in fibre pancake, which keeps one full for a long time. Toss the gram flour, onions, tomatoes, fresh coriander leaves, green chillies, and salt, in a bowl. A batter of pouring consistency with all the above ingredients and water, suffice. Adding some grated carrots, or chopped spinach increases the nutritional value. However, that is completely optional. Enhance the taste with some ajwain and turmeric. Pour the batter into the frying pan to which you have added some ghee or sunflower oil, and it gets ready in the blink of an eye. Carefully lift the chilla, with a spatula and turn it the other way, so that both sides are golden brown. Serve hot.


·        Gatte Ki Sabzi

This is a typical Rajasthani dish, made with gram flour, turmeric powder, red chilli powder, cumin seeds, garam masala powder, and salt. The gatta is kneaded the same way, as you would knead the chapatti dough. Make cylindrical rolls and chop them into small pieces. Boil them in some water. When they are almost done, they start floating on the surface of the water. Shallow fry the gatta and keep aside. In another pan, roast mustard seeds and cumin. Once they start crackling, add chopped onions, chopped green chillies, grated ginger, asafoetida, coriander powder, red chilli powder, garam masala powder, and curd, and cook until oil leaves the gravy. Finish off with water and salt, when it boils, and add the gatta. Cook for some time, and serve with a garnishing of chopped coriander leaves.



·       Besan Roti

You can prepare this roti in a jiffy, and have it with pickles. You need a handful of ingredients like gram flour, cumin powder, red pepper flakes, black pepper powder, salt, and turmeric. Kasuri methi enhances the flavours. Boil water in a saucepan, and add the spices to it. After it is ready, add the same to the gram flour. Knead the dough, and then using a rolling board, make rotis. Since this is supposed to be a weight loss recipe, brush some cooking oil with a brush and roast the rotis. When brown spots appear, remove them from the heat. Voila! Your besan roti is ready.



·       Besan Halwa

This is another quick besan dessert recipe that you can rustle up with gram flour, ghee, milk, and sugar. This is one dish, which you can gorge on, without counting calories. Suji and chopped cashews make this dish, even more delectable. Heat a generous amount of ghee in a large pan, and then add the besan. Adding suji is optional. Keep on stirring the besan, until it changes colour. When it is golden brown, add milk. Do not forget to stir, though. Cook until the mixture and the ghee separate, and then add saffron-infused milk. Finish off with sugar. You can add the final touch with cardamom powder and chopped cashews.



·       Besan Laddoos

Make this three-ingredient recipe in no time. Besan, ghee, and sugar, and that is all you need here. You can add jaggery in place of sugar, as it is considered a healthy option. Moreover, you can garnish the laddoos with nuts and raisins, according to your taste buds. You have to follow the same process initially, as the one for Halwa. But do not add the milk. When the mixture cools, stir in the sugar and cardamom powder. Knead the mixture a bit and roll it into balls. Store in an airtight jar and enjoy.
